A refreshing and delicious pesto that pairs perfectly with fish, bread, or quinoa. Quick to prepare with easily accessible ingredients.
Preparation Time: 10 minutes
Serving Size: 4 dl

Ingredients:

- 4 dl chopped parsley
- 1.5 tsp lemon zest
- 2 tbsp lemon juice
- 2 garlic cloves
- ½ green chili, seeds removed
- Black pepper to taste
- 1 dl olive oil

Instructions:

1. Place all ingredients except for the olive oil into the bowl of a food processor.
2. Blend the ingredients into a smooth paste.
3. Gradually add the olive oil while blending until the mixture is smooth.
4. Taste and add salt if needed.
5. Store the pesto in an airtight container in the refrigerator. You can leave a layer of oil on top to help it last longer.
