Ingredients:
- 300 g pasta (e.g., penne or tagliatelle) - 200 g fresh mushrooms (e.g., chanterelles and button mushrooms)
- 1 onion
- 2 garlic cloves
- 2 tbsp olive oil
- 100 ml cream
- 50 g Parmesan cheese (grated)
- Salt and pepper to taste
- Fresh parsley (for garnish)
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and reserve a bit of the cooking water. 2. Chop the onion and garlic. Heat the olive oil in a large skillet and add the onions. Sauté until soft.
3. Add the chopped mushrooms to the skillet and cook until golden brown and the moisture has evaporated.
4. Pour the cream into the mushroom mixture and stir well. Let it simmer for a few minutes.
5. Add the cooked pasta to the mushroom sauce. Mix and add reserved cooking water as needed for desired consistency.
6. Season with salt and pepper. Add the grated Parmesan cheese and stir to combine.
7. Serve immediately, garnished with fresh parsley.
