A spicy and hearty Guinness beef stew that warms you up on cold days. Perfect for serving with family or friends.

Ingredients:

- 1 kg beef (such as chuck or brisket)
- 2 tablespoons oil
- 1 large onion, chopped
- 2 garlic cloves, minced
- 3-4 carrots, sliced
- 3 potatoes, diced
- 500 ml Guinness beer
- 500 ml beef broth
- 2 tablespoons tomato paste
- 2-3 bay leaves
- 1 teaspoon thyme
- Salt and pepper to taste

Instructions:

1. Heat oil in a large pot over medium heat. Brown the beef on all sides and then set it aside.
2. Add onion and garlic to the pot and sauté until softened.
3. Add carrots and potatoes to the pot, mixing well.
4. Return the beef to the pot and add Guinness beer, beef broth, tomato paste, bay leaves, and thyme.
5. Bring the mixture to a boil, then reduce heat and let it simmer covered for about 1.5 hours, or until the meat is tender.
6. Season with salt and pepper, and serve hot.
