Tomato Soup

A warm, comforting soup made from fresh tomatoes and aromatic herbs. Preparation time: 40 minutes
Serving size: 4 servings
Ingredients:
- 1 kg ripe tomatoes
- 1 onion
- 2 garlic cloves
- 2 tbsp olive oil
- 500 ml vegetable broth
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Peel and chop the onion and garlic.
2. Heat olive oil in a pot over medium heat and add the onion and garlic. Sauté until they are soft.
3. Rinse and chop the tomatoes. Add them to the pot and cook for about 10 minutes.
4. Pour in the vegetable broth and let the soup simmer over low heat for about 20 minutes.
5. Blend the soup with an immersion blender or in a blender until smooth.
6. Season with salt and pepper. Serve with fresh basil on top.
