A lovely and rich sweet potato casserole, perfect for winter celebrations. Preparation time is about 1 hour, serving 4-6 people.Ingredients:
- 600 g sweet potatoes- 2 dl cream
- 2 dl milk
- 2 eggs
- 1 dl grated cheese (e.g., Parmesan or Emmental)
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp nutmeg
- 1 tbsp honey
- Butter for greasing the baking dish
Instructions:
1. Peel and slice the sweet potatoes into thin rounds.2. Grease a baking dish with butter.
3. Layer the sweet potato slices in the dish.
4. In a bowl, mix the cream, milk, eggs, salt, black pepper, nutmeg, and honey. Pour the mixture over the sweet potatoes.
5. Sprinkle the grated cheese evenly on top of the casserole.
6. Bake in a preheated oven at 200°C (392°F) for about 40-50 minutes, until the sweet potatoes are tender and the top is beautifully golden brown.
7. Let the casserole rest for a moment before serving.
