Serving Size: 4 servings
Ingredients:
- 1 liter vegetable broth
- 2 medium potatoes, diced
- 2 carrots, sliced
- 1 zucchini, diced
- 1 bell pepper, diced
- 150 g green beans, chopped
- 1 dl fresh basil, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
- Lemon juice to taste
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the diced potatoes and carrots, sauté for about 5 minutes.
3. Add the zucchini, bell pepper, and green beans, continue to sauté for another 5 minutes.
4. Pour the vegetable broth into the pot and bring to a boil.
5. Reduce the heat and let the soup simmer gently for about 15 minutes, until the vegetables are tender.
6. Season the soup with salt, pepper, and lemon juice.
7. Stir in the chopped basil just before serving.
