A delicious and healthy berry dessert made easily with fresh berries. This pudding is a perfect way to enjoy the best flavors of summer. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 500 g fresh berries (e.g., strawberries, blueberries, raspberries) - 1 dl sugar (to taste)
- 4 dl water
- 3 tbsp cornstarch
- 1 dl cold water (for dissolving cornstarch)
- 1 tsp vanilla sugar (optional)
Instructions:
1. Rinse and chop the berries if necessary. 2. In a pot, bring 4 dl of water to a boil and add the sugar. Stir until the sugar dissolves.
3. Add the berries to the pot and simmer on low heat for about 5-10 minutes until the berries soften.
4. Dissolve the cornstarch in the cold water and add the mixture to the cooked berries.
5. Stir well and cook for a few more minutes until the pudding thickens.
6. Remove the pot from the heat and add the vanilla sugar if desired.
7. Pour the pudding into serving dishes and let it cool before serving.
