Ingredients

- 400 g mushrooms
- 1 onion
- 2 garlic cloves
- 4 dl vegetable broth
- 2 dl cream
- 2 tbsp butter
- Salt and pepper to taste
- Fresh parsley for garnish

Instructions

1. Peel and finely chop the onion and garlic.
2. Clean the mushrooms and slice them.
3. Heat the butter in a pot and sauté the onion and garlic for a few minutes until soft.
4. Add the mushrooms to the pot and cook for a few minutes until they are golden.
5. Pour in the vegetable broth and let it simmer for about 10 minutes.
6. Blend the soup with an immersion blender or in a blender until completely smooth.
7. Stir in the cream and season with salt and pepper. Heat the soup gently, but do not let it boil.
8. Serve the soup garnished with fresh parsley.
