A traditional Finnish berry pudding that evokes childhood memories. Quick and easy to make, this treat is perfect for indulgent moments. Preparation Time: 15 minutes
Serving Size: 4-6 servings
Ingredients:
- 5 dl diluted juice (e.g., fruit juice drink) - 2 tbsp potato starch
- 300 g frozen berries (such as blueberries, raspberries, or lingonberries)
- Fine sugar (for topping, optional)
- Whipped cream (for serving, optional)
Instructions:
1. Mix the potato starch with a small amount of water until smooth. 2. Pour the diluted juice into a saucepan and heat until boiling.
3. Gradually add the potato starch mixture to the hot juice while stirring continuously.
4. Allow the pudding to bubble and thicken, but do not boil for too long.
5. Gently fold in the frozen berries.
6. Pour the finished pudding into serving dishes, or layer the berries in the dishes first and then pour the pudding over them.
7. To prevent a skin from forming, sprinkle a little fine sugar on top or cover with plastic wrap.
8. Serve with whipped cream if desired.
