A delicious and refreshing dessert made from a mixed berry blend. Perfect to serve on its own or with vanilla sauce.
Preparation Time: 20 minutes
Serving Size: 4-6 servings
Ingredients:
- 400 g mixed berries
- 2-3 liters of water
- Approximately 4 tablespoons potato starch
- Approximately 3 dl fine sugar
Instructions:
1. Boil the mixed berries in water for about 10 minutes until they are soft.
2. Strain the berries to collect the juice, and set aside the berries for use in other recipes if desired.
3. Pour the berry juice back into the pot and add the sugar. Heat until the sugar dissolves.
4. Mix the potato starch with a small amount of cold water until smooth.
5. Gradually add the potato starch mixture to the berry juice while stirring continuously until the mixture thickens.
6. Let the mixture boil for a moment to ensure the potato starch is cooked through.
7. Pour the berry pudding into a serving dish and allow it to cool before serving.
