Ingredients:
- 300 g spaghetti pasta - 150 g bacon or pancetta
- 2 eggs
- 100 g Parmesan cheese (grated)
- 2 cloves garlic (minced)
- Salt (to taste)
- Black pepper (to taste)
- Fresh parsley (for garnish)
Instructions:
1. Cook the spaghetti in salted water according to package instructions. Drain the pasta, reserving a little pasta water. 2. In a large skillet, cook the bacon or pancetta over medium heat until crispy. Add the minced garlic and cook for an additional minute.
3. In a bowl, crack the eggs and add the grated Parmesan cheese. Mix well and season with salt and black pepper.
4. Add the drained pasta to the skillet with the bacon and mix thoroughly. Remove the skillet from the heat.
5. Quickly add the egg mixture to the pasta and stir well to cook the eggs lightly without scrambling them. If needed, add a little reserved pasta water to achieve a creamy sauce.
6. Serve immediately, garnished with fresh parsley.
