A delicious and easy berry pudding that is perfect for dessert or served alongside ice cream.
Preparation Time: 15 minutes
Serving Size: 4-6 servings
Ingredients:
- 1 package (400 g) mixed berries
- 3/4 cup sugar
- 2 cups cold water
- 2 1/2 tablespoons cornstarch
- 1/4 cup cold water
- Additional sugar for topping
Instructions:
1. Pour the frozen berries into the bottom of a saucepan.
2. Sprinkle sugar over the berries.
3. Add 2 cups of cold water to the saucepan.
4. Place the saucepan on the stove and bring to a boil without stirring.
5. Once the water starts to bubble, remove the saucepan from the heat.
6. Mix the cornstarch with 1/4 cup of cold water until smooth.
7. Carefully pour the cornstarch mixture into the berries and stir well.
8. Return the saucepan to the heat and cook for a few more minutes until the pudding thickens.
9. Pour the pudding into serving dishes and allow to cool.
10. Serve with a sprinkle of sugar on top.
