Serving Size: 4 servings
Ingredients:
- 400 g spaghetti
- 150 g bacon or pancetta
- 3 egg yolks
- 1 whole egg
- 100 g grated Parmesan cheese
- 2 garlic cloves
- Salt
- Black pepper
- Fresh parsley (optional)
Instructions:
1. Cook the spaghetti in salted water according to package instructions until al dente.
2. Chop the bacon or pancetta into small pieces and fry it in a pan over medium heat until crispy.
3. Add the crushed garlic cloves to the bacon and cook for another minute.
4. In a bowl, mix together the egg yolks, whole egg, grated Parmesan cheese, salt, and black pepper.
5. Once the pasta is cooked, drain it, reserving a bit of the cooking water. Add the pasta to the pan with the bacon and garlic.
6. Remove the pan from heat and add the egg mixture to the pasta. Stir quickly to ensure the eggs cook from the residual heat.
7. If needed, add a little reserved pasta water to make the sauce creamy.
8. Serve immediately with extra grated Parmesan cheese and fresh parsley on top.
