A delicious dessert perfect for Valentine's Day!
Preparation Time: 1 hour 15 minutes (plus cooling time)
Serving Size: 12 bars
Ingredients:
- 200 g digestive biscuits
- 100 g butter
- 400 g cream cheese
- 200 g mascarpone cheese
- 150 g sugar
- 3 eggs
- 1 tsp vanilla sugar
- 200 g strawberry jam
- 100 ml cream
Instructions:
1. Crush the digestive biscuits and mix them with the melted butter. Press the mixture firmly into the bottom of a rectangular baking dish lined with parchment paper.
2. In a bowl, beat the cream cheese, mascarpone, sugar, eggs, and vanilla sugar together until smooth.
3. Pour the cheese mixture over the biscuit base and smooth the surface.
4. Bake the cheesecake in a preheated oven at 175°C (350°F) for about 30-35 minutes, or until set. Allow it to cool.
5. Spread the strawberry jam over the cooled cheesecake.
6. Whip the cream until stiff peaks form and use it to decorate the top of the cheesecake.
7. Cut the cheesecake into bars and serve.
