Delicious and spiced gingerbread cookies perfect for celebrating Valentine’s Day.

Ingredients

- 1 dl syrup
- 1 tbsp cinnamon
- 400 g butter
- 4.5 dl sugar
- 3 dl potato flour
- 3 eggs
- 3 tsp baking soda
- 1.5 tbsp cloves
- About 1 tbsp ginger
- 9 dl all-purpose flour

Instructions

1. Whip the eggs and sugar in a bowl until the mixture is light and fluffy.
2. Melt the butter in a saucepan and let it cool.
3. Add the cooled melted butter to the egg mixture and mix well.
4. Stir in the syrup, cinnamon, cloves, ginger, and baking soda until smooth.
5. Gradually add the potato flour and all-purpose flour until the dough is soft but manageable.
6. Shape the dough into balls and roll them out on a floured surface to a thin sheet.
7. Cut out desired shapes for the cookies and transfer them to a baking sheet lined with parchment paper.
8. Bake in a preheated oven at 175°C (350°F) for about 8-10 minutes or until the cookies are nicely colored.
9. Allow the cookies to cool before decorating.
