Ingredients:
- Cake Base - 4 eggs
- 200 g sugar
- 200 g all-purpose flour
- 100 ml milk
- 100 g butter
- 1 tsp baking powder
- Lemon Mousse
- 400 ml heavy cream
- 200 g cream cheese
- 100 g sugar
- Juice and zest of 2 lemons
- Soaking Syrup
- Strawberry-flavored soda
- Fillings
- Fresh strawberries
- Topping
- Fondant
- Decoration
- Satin Ice Gum Paste (for rose decorations)
Instructions:
1. Prepare the cake base: Whisk the eggs and sugar until light and fluffy. Add melted butter and milk, and mix well. Combine the flour and baking powder, then add to the batter. Pour the batter into a greased cake pan. 2. Bake the cake base at 175°C (350°F) for about 25-30 minutes. Let it cool.
3. Make the lemon mousse: Whip the cream until stiff peaks form. In another bowl, mix cream cheese, sugar, lemon juice, and zest. Gently fold the whipped cream into the cream cheese mixture.
4. Cut the cooled cake into three layers. Soak each layer with strawberry-flavored soda.
5. Spread lemon mousse between the cake layers and add fresh strawberries.
6. Cover the entire cake with fondant. Shape and decorate with roses made from Satin Ice Gum Paste.
7. Allow the cake to set before serving.
