A delightful celebration cake featuring a chocolate sponge base and refreshing mint chocolate mousse. The perfect choice for graduation parties!

Ingredients:
- Chocolate Sponge:
- 200 g dark chocolate
- 100 g butter
- 3 dl sugar
- 4 eggs
- 2.5 dl gluten-free flour
- 1 dl cocoa powder
- 1 tsp baking powder
- 1 tsp vanilla sugar
- Mint Chocolate Mousse:
- 3 dl heavy cream
- 200 g cream cheese
- 100 g powdered sugar
- 2 tsp mint extract
- 100 g chocolate (white or milk chocolate)
- Frosting and Decorations:
- 250 g Satin Ice fondant
- Various fondant decorations
Instructions:
1. Prepare the chocolate sponge. Melt the chocolate and butter together in a saucepan over low heat. Mix well.
2. In a separate bowl, whisk the eggs and sugar together until fluffy.
3. Add the melted chocolate mixture to the egg mixture and stir to combine.
4. In another bowl, mix the gluten-free flour, cocoa powder, baking powder, and vanilla sugar. Gradually add this dry mixture to the batter and mix until smooth.
5. Pour the batter into a greased cake pan and bake at 175°C (350°F) for about 30-35 minutes. Allow to cool.
6. Make the mint chocolate mousse. Whip the heavy cream until stiff peaks form. Add the cream cheese, powdered sugar, and mint extract, and gently fold to combine.
7. Melt the chocolate and fold it into the mousse mixture thoroughly.
8. Once the sponge cake has cooled, slice it in half. Spread half of the mousse on the bottom layer, then place the second layer on top.
9. Cover the cake with Satin Ice fondant and decorate as desired with fondant decorations.
