A festive and beautifully decorated cake, perfect for graduations or other celebrations. This cake features a light sponge base filled with delicious strawberry and lemon mousses, all covered in fondant.
Preparation Time: 2 hours
Serving Size: 12-14 servings

Ingredients:

- Cake Base:
- 4 dl all-purpose flour
- 2 dl sugar
- 2 tsp baking powder
- 1 tsp salt
- 1 dl milk
- 1 dl oil
- 4 eggs
- 1 tsp vanilla sugar
- Strawberry Mousse:
- 300 g fresh strawberries
- 2 dl heavy cream
- 1 dl sugar
- 3 gelatin sheets
- 0.5 dl water
- Lemon Mousse:
- 2 dl lemon juice
- 2 dl heavy cream
- 1 dl sugar
- 3 gelatin sheets
- 0.5 dl water
- Frosting and Decorations:
- 500 g pink fondant
- 250 g white fondant
- Edible decorations like lace and two-toned roses

Instructions:

1. Prepare the cake base: In a bowl, mix the dry ingredients (flour, sugar, baking powder, salt). Add milk, oil, eggs, and vanilla sugar. Whisk until smooth.
2. Pour the batter into a greased and floured cake pan. Bake at 175°C (350°F) for about 30-35 minutes. Let it cool.
3. Make the strawberry mousse: Clean the strawberries and puree them. Whip the heavy cream and add sugar. Soak the gelatin sheets in water, melt them, and mix them into the strawberry puree. Fold in the whipped cream.
4. Make the lemon mousse: Combine lemon juice and sugar. Soak the gelatin sheets in water, melt them, and mix them into the lemon juice. Whip the heavy cream and fold it into the mixture.
5. Cut the cooled cake base into three layers. Soak the layers with your preferred liquid. Spread the strawberry mousse on the first layer and the lemon mousse on the second.
6. Stack the layers on top of each other and cover the entire cake with fondant. Decorate the cake with lace and two-toned roses.
