A delightful soup that pairs beautifully with Wolfberger Riesling-Pinot Gris, perfect for springtime and light meals. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 1 tablespoon olive oil - 1 onion, chopped
- 2 garlic cloves, crushed
- 3 carrots, diced
- 2 potatoes, diced
- 1 liter vegetable stock
- 200 grams fresh green beans, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup Wolfberger Riesling-Pinot Gris wine
- Fresh parsley, chopped (for garnish)
Instructions:
1. Heat olive oil in a large pot over medium heat. Add chopped onion and crushed garlic, sauté until soft. 2. Add diced carrots and potatoes, continue cooking for a few minutes.
3. Pour in the vegetable stock and bring to a boil. Reduce heat and simmer for about 15 minutes, until the vegetables are tender.
4. Add green beans, salt, black pepper, and Wolfberger Riesling-Pinot Gris. Simmer for another 5-10 minutes.
5. Serve the soup garnished with fresh parsley.
