Ingredients:
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 3 carrots, diced
- 2 potatoes, diced
- 1 sweet potato, diced
- 1 liter vegetable broth
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon dried thyme
- 100 ml cream (or plant-based cream)
- Fresh parsley, chopped (for garnish)
Instructions:
1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and crushed garlic, sauté for about 5 minutes until soft.
2. Add the diced carrots, potatoes, and sweet potato. Cook for another 5 minutes, stirring occasionally.
3. Pour the vegetable broth into the pot and season with salt, black pepper, and thyme. Bring to a boil, then reduce the heat. Let the soup simmer for about 20 minutes until the vegetables are tender.
4. Blend the soup with an immersion blender until smooth. Stir in the cream and mix well. Heat the soup again briefly.
5. Serve hot, garnished with fresh parsley.
