Ingredients:
- Base:
- 2 large eggs
- 2.5 dl brown sugar
- 1 tsp pure vanilla powder
- 3 dl all-purpose flour
- 1 dl cornstarch or potato starch
- 1.5 tsp baking powder
- 50 g butter, melted
- 250 g cottage cheese
- Filling:
- 1 large can of sliced peaches (480 g)
- 50 g white chocolate, melted
- 200 g cottage cheese
- 0.5 dl vanilla sauce
- 1 tbsp brown sugar
- 1 egg
- Topping:
- 30 g butter, melted
- 0.5 dl almond flour
- 0.5 dl all-purpose flour
- 0.5 dl brown sugar
- 50 g white chocolate, grated
- Additional:
- A small amount of butter for greasing the baking dish
Instructions:
1. Beat the eggs and brown sugar together until fluffy. Stir in the vanilla powder.
2. In a separate bowl, combine the all-purpose flour, cornstarch, and baking powder, then add this dry mixture to the egg-sugar mixture.
3. Incorporate the cottage cheese and melted butter into the batter until smooth.
4. Grease a tart pan with butter and spread the dough evenly across the bottom.
5. Slice the peaches and arrange them over the tart base.
6. Melt the white chocolate on low heat and mix it with the cottage cheese, vanilla sauce, egg, and brown sugar. Pour the filling over the peaches.
7. In a bowl, mix the melted butter with almond flour, all-purpose flour, and brown sugar. Grate the white chocolate and crumble this mixture over the tart.
8. Bake in the oven at 225°C (about 437°F) for 30-40 minutes or until the tart is set. Cover with foil if the edges brown too quickly.
9. Serve slightly warm or completely cooled. Vanilla sauce makes a lovely addition.
