This classic Italian pasta carbonara is quick and easy to prepare. Rich flavors and creamy texture make it perfect for a weeknight dinner. Preparation Time: 20 minutes

Ingredients:
- 300 g pasta (spaghetti or fettuccine) - 150 g pancetta or bacon, diced
- 2 large eggs
- 100 g Parmesan cheese, grated
- 2 garlic cloves, minced
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente. Reserve 1 cup of pasta cooking water and drain the pasta.2. In a frying pan, heat the pancetta or bacon over medium heat until browned and crispy. Add the minced garlic and sauté for another minute.
3. In a bowl, whisk together the eggs and grated Parmesan cheese. Season with salt and black pepper to taste.
4. Add the cooked pasta to the pan with the pancetta and mix well. Remove the pan from the heat.
5. Pour the egg mixture over the pasta and stir quickly to ensure the eggs cook from the heat of the pasta without scrambling. If needed, add reserved pasta water to achieve a creamy consistency.
6. Serve immediately, garnished with fresh parsley and additional Parmesan cheese on top.
