This delicious burger recipe combines the cheesy goodness of Welsh rarebit with juicy patties, making it a perfect treat for any occasion. Preparation Time: 1 hour

Ingredients:
Rarebit Mayonnaise - 250 g mayonnaise
- 1 ½ tbsp English mustard
- 1 ½ tbsp Worcestershire sauce
- ½ - 1 tsp Sriracha
Rarebit
- 30 ml English pale ale
- 2 tsp Worcestershire sauce
- 2 tsp English mustard
- 30 ml cream
- ½ tbsp Sriracha
- 2 tsp cornflour
- 10 ml cream
- 25 g grated Parmesan cheese
- 85 g grated vintage cheddar cheese
Other Ingredients
- 600 g flank steak ground beef
- Salt and pepper
- 8 slices cooked bacon
- 4 potato brioche buns (or good quality rolls)
- Crisp lettuce
- Red onion, thinly sliced
- Pickles, sliced
Instructions:
1. In a small bowl, combine all the ingredients for the mayonnaise and refrigerate. 2. In a saucepan, heat the pale ale, Worcestershire sauce, mustard, 30 ml cream, and Sriracha. Mix cornflour with 10 ml cream. Once the mixture starts to simmer, whisk in the cornflour mixture and Parmesan cheese until smooth and thickened. Set aside to cool.
3. Stir in the grated cheddar into the cooled mixture, then shape it into four balls. Flatten the balls into approximately 10 cm discs and refrigerate.
4. Coarsely grind the beef using a food processor or meat grinder. Divide into four portions and shape into patties. Season with salt and pepper just before cooking.
5. Heat a skillet and cook the patties in two batches, flipping them until juices rise to the surface. Set the patties aside.
6. Toast the insides of the rolls and cook the bacon slices in the skillet until crispy.
7. Assemble the burgers: place lettuce on the bottom bun, followed by pickles, red onion, mayonnaise, the beef patty, Welsh rarebit, and bacon.
8. Grill the assembled burgers under the oven broiler until the cheese melts and the top is golden. Place the top bun on and serve.
