Ingredients:
- 200 g pasta (e.g., spaghetti or fusilli)
- 100 g cherry tomatoes, halved
- 1 green bell pepper, diced
- 1 small red onion, chopped
- 2 garlic cloves, crushed
- 2 tablespoons olive oil
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh basil for garnish (optional)
- Grated Parmesan cheese (optional)
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and reserve a little cooking water.
2. Heat olive oil in a large skillet over medium heat. Add the red onion and garlic, and sauté for about 2-3 minutes.
3. Add the bell pepper and cherry tomatoes. Cook for another 5-7 minutes, until the vegetables are tender.
4. Add the cooked pasta to the skillet and mix well. If needed, add a little cooking water to prevent the pasta from drying out.
5. Season with basil, salt, and pepper. Stir all the ingredients together.
6. Serve immediately with fresh basil and grated Parmesan cheese if desired.
