Ingredients:
- 400 g pasta (spaghetti or fettuccine)
- 150 g bacon or pancetta
- 3 eggs
- 100 g grated Parmesan cheese
- 2 garlic cloves
- Salt
- Black pepper
- Fresh parsley (optional)
Instructions:
1. Cook the pasta in salted water according to the package instructions until al dente. Reserve about 1 cup of the pasta water and drain the pasta.
2. In a skillet over medium heat, add the bacon or pancetta. Cook until crispy.
3. Add minced garlic to the skillet with the bacon and cook for an additional minute.
4. In a bowl, whisk together the eggs, grated Parmesan cheese, salt, and black pepper.
5. Add the cooked pasta to the skillet with the bacon and garlic. Mix well.
6. Pour the egg mixture over the pasta and stir quickly to ensure the eggs cook but do not scramble. Add some reserved pasta water if needed to create a creamy sauce.
7. Serve immediately with fresh parsley if desired.
