Serving Size: 4 servings
Ingredients:
- 2 carrots
- 2 potatoes
- 1/2 celery root
- 1 red onion
- 2 cloves garlic
- 1 cup green beans
- 1 cup peas
- 4 cups vegetable broth
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh herbs (such as thyme or parsley)
Instructions:
1. Peel and chop the carrots, potatoes, celery root, and red onion.
2. Heat the olive oil in a large pot and add the chopped vegetables. Sauté for a few minutes.
3. Add the minced garlic and stir well.
4. Pour the vegetable broth into the pot and bring to a boil.
5. Add the green beans and peas. Let the stew simmer on low heat for about 20-30 minutes, until the vegetables are tender.
6. Season with salt, pepper, and fresh herbs.
7. Serve the stew warm, ideally with some bread on the side.
