Serving Size: 4 servings
Ingredients:
- 500 g venison (e.g., elk or deer)
- 2 dl red wine
- 1 onion
- 2 garlic cloves
- 2 carrots
- 2 potatoes
- 2 bay leaves
- 1 tsp thyme
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 dl beef broth
Instructions:
1. Cut the venison into bite-sized pieces and season with salt and pepper.
2. Peel and chop the onion, garlic, carrots, and potatoes.
3. Heat the olive oil in a large pot and brown the venison on all sides.
4. Add the onion and garlic, sautéing for a few minutes until softened.
5. Add the carrots and potatoes to the pot and mix well.
6. Pour in the red wine and beef broth, then add the bay leaves and thyme.
7. Bring to a simmer and cook on low heat for about 1.5 to 2 hours, until the meat is tender.
8. Taste and adjust seasoning with additional salt and pepper if needed.
9. Serve the venison in red wine with mashed potatoes or fresh bread.
