A delightful lemon pie featuring a crispy crust and tangy-sweet lemon filling. Perfect for Easter or any celebration! Preparation Time: 1 hour
Serving Size: 8 servings
Ingredients:
- 150 g butter
- 100 g sugar
- 1 dl all-purpose flour
- 1 dl potato flour
- 1 tsp baking powder
- 1 egg
- Juice and zest of 2 lemons
- 2 dl sugar
- 2 dl water
- 4 tbsp cornstarch
Instructions:
1. Start by preparing the crust. Beat the softened butter and sugar together until fluffy.
2. Add the egg and mix well.
3. In a separate bowl, combine the all-purpose flour, potato flour, and baking powder. Gradually add the dry mixture to the butter mixture and mix until a smooth dough forms.
4. Press the dough into a pie dish and pre-bake in a 175°C (350°F) oven for about 15 minutes, or until the crust is golden brown.
5. Prepare the lemon filling. In a saucepan, heat the lemon juice, water, and sugar together.
6. Mix the cornstarch with a small amount of cold water and add to the saucepan. Cook the mixture, stirring constantly, until it thickens.
7. Stir in the lemon zest and mix well.
8. Pour the lemon filling over the pre-baked crust and allow it to cool before serving.
