A traditional Finnish pastry, especially popular on Runeberg's Day. This sweet, spiced treat is perfect with coffee or a fortified wine.
Preparation Time: 1 hour
Serving Size: 12 torttus
Ingredients:
- 150 g butter
- 1 dl sugar
- 1 dl brown sugar
- 3 eggs
- 2 dl almond flour
- 1 dl all-purpose flour
- 1 tsp baking powder
- 1 tsp cardamom
- 1 dl raspberry jam
- 12 almond flakes (for decoration)
Instructions:
1. Preheat the oven to 175°C (350°F).
2. In a bowl, cream the butter and sugars until fluffy.
3. Add the eggs one at a time, mixing well after each addition.
4. In another bowl, combine the almond flour, all-purpose flour, baking powder, and cardamom. Gradually add this dry mixture to the wet mixture and mix until smooth.
5. Gently fold the raspberry jam into the batter.
6. Divide the batter into muffin tins or tart molds.
7. Bake in the oven for about 20-25 minutes, or until the torttus are cooked through.
8. Allow to cool before decorating with almond flakes.
