A delightful Finnish pastry filled with raspberry jam and topped with a sweet icing. Preparation Time: 15 minutes
Cooking Time: 25 minutes
Serving Size: 12 servings
Ingredients:
- 150 g butter
- 1 dl sugar
- 2 dl all-purpose flour
- 1 dl almond flour
- 1 dl gingerbread crumbs
- 2 tsp baking powder
- 1 dl milk
- 1 tsp almond extract
- 1 dl raspberry jam
- 1 dl powdered sugar (for decoration)
Instructions:
1. Preheat the oven to 175°C (350°F).
2. In a mixing bowl, beat the softened butter and sugar together until light and fluffy.
3. Add the eggs one at a time, mixing well after each addition.
4. In a separate bowl, combine the dry ingredients: all-purpose flour, almond flour, gingerbread crumbs, and baking powder. Gradually add this mixture to the butter mixture, alternating with the milk.
5. Stir in the almond extract until the batter is smooth.
6. Pour the batter into a baking tray lined with parchment paper or into muffin tins.
7. Bake in the preheated oven for about 20-25 minutes, or until the tops are golden brown.
8. Allow the pastries to cool, then create a small indentation in the center of each tart.
9. Fill the indentation with raspberry jam.
10. For the icing, mix powdered sugar with a little water to create a glaze and decorate the pastries as desired.
11. Serve and enjoy!
