A traditional Finnish pastry, Runebergintortut are almond-flavored tartlets filled with raspberry jam and soaked in a sweet syrup. Perfect for special occasions or as a delightful treat!

Serving Size: 12 servings
Ingredients:
- 150 g butter
- 1 dl sugar
- 2 dl almond flour
- 1 dl cookie crumbs (e.g., gingerbread)
- 2 eggs
- 1/4 tsp almond extract or a few drops of bitter almond extract
- 1/2 dl raspberry jam
- 1 dl powdered sugar
- 2 tbsp water
- 2 tbsp alcohol (e.g., punch, rum, or cognac)
Instructions:
1. Preheat the oven to 175°C (350°F).
2. In a bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition.
3. Stir in the almond flour, cookie crumbs, and almond extract. Mix until a smooth batter forms.
4. Divide the batter into muffin tins or desired shapes. Place a teaspoon of raspberry jam in the center of each tartlet.
5. Bake in the oven for about 15-20 minutes, or until golden brown.
6. Prepare the soaking syrup by boiling water and sugar together. Add the alcohol and stir.
7. Remove the tarts from the oven and immediately soak them with the syrup.
8. Allow to cool. Dust with powdered sugar before serving. Enjoy!
