Delicious traditional Finnish pastries perfect for celebrations or coffee breaks. This lighter version is just as tasty as the classic! Preparation Time: 30 minutes
Serving Size: About 12 torts
Ingredients:
- 2 eggs
- 0.5 dl brown sugar
- 1 dl gingerbread crumbs (about 40g gingerbread cookies)
- 1 dl all-purpose flour
- 0.75 dl rolled oats
- 2 tsp baking powder
Instructions:
1. Preheat the oven to 175°C (350°F). Grease a muffin tin or use paper liners.
2. Whisk the eggs and brown sugar until light and fluffy.
3. Add the gingerbread crumbs, flour, rolled oats, and baking powder to the mixture. Mix well until all ingredients are combined.
4. Divide the batter into the muffin cups, filling them about 2/3 full.
5. Bake in the oven for about 15-20 minutes, until the torts are golden brown and cooked through. Check for doneness with a toothpick.
6. Allow to cool before serving.
