Delicious traditional Finnish pastries perfect for Runeberg's Day. These cakes combine a nutty flavor with a spiced gingerbread crumb base.

Serving Size: About 12 cakes

Ingredients:

- 150 g margarine
- 1½ dl sugar
- 2 eggs
- 1 dl ground almonds
- 1 dl gingerbread crumbs
- 1½ dl all-purpose flour
- 1 tsp baking powder
- 1 tsp vanilla sugar
- ½ dl milk

Instructions:

1. Preheat the oven to 175°C (350°F).
2. In a bowl, cream the margarine and sugar together until the mixture is light and fluffy.
3. Add the eggs one at a time, mixing well after each addition.
4. Stir in the ground almonds, gingerbread crumbs, flour, baking powder, and vanilla sugar.
5. Add the milk to the batter and mix until smooth.
6. Spoon the batter into muffin cases, filling each about 2/3 full.
7. Bake in the oven for about 20-25 minutes or until the cakes are cooked through. Check doneness with a toothpick.
8. Allow to cool before serving and optionally decorate with powdered sugar or berry puree.
