A delightful Finnish pastry, perfect for special occasions. Preparation time: 40 minutes
Serving size: 12 servings
Ingredients:
- 1 dl almond flour
- 1 dl sugar
- 1 dl butter
- 1 dl all-purpose flour
- 1 dl breadcrumbs
- 2 eggs
- 1 tsp baking powder
- 1 dl raspberry jam
- 1/2 dl rum or cognac
- Powdered sugar for decoration
Instructions:
1. Preheat the oven to 175°C (350°F).
2. In a bowl, cream the butter and sugar together until light and fluffy.
3. Add the eggs one at a time, mixing well after each addition.
4. Stir in the almond flour, all-purpose flour, breadcrumbs, and baking powder until a smooth batter forms.
5. Divide the batter into muffin tins or Runeberg tort molds.
6. Place a spoonful of raspberry jam on top of each pastry.
7. Bake in the oven for about 20-25 minutes, or until the pastries are golden brown.
8. Allow to cool before decorating.
9. Dust with powdered sugar before serving.
