A moist and almond-flavored treat, perfect for enjoying in February, especially on Runeberg's Day. This recipe is easy and can be baked in muffin tins, on a sheet, or in a cake pan.Preparation Time: 1 hour
Serving Size: 12 torttu
Ingredients:
- 200 g butter
- 2 dl sugar
- 3 dl all-purpose flour
- 1 dl almond flour
- 2 tsp baking powder
- 1 dl milk
- 2 eggs
- 1 dl raspberry jam
- 1 tsp almond extract
- Crumbled gingerbread (for decoration)
- Icing (for decoration)
Instructions:
1. Preheat the oven to 175°C (350°F).
2. In a bowl, cream together the butter and sugar until light and fluffy.
3. Add the eggs one at a time, mixing well after each addition.
4. In a separate bowl, combine the all-purpose flour, almond flour, and baking powder. Gradually add the dry ingredients to the batter, alternating with the milk. Stir in the almond extract.
5. Fill muffin tins with the batter about 2/3 full.
6. Place a dollop of raspberry jam in the center of each torttu.
7. Bake in the oven for about 20-25 minutes or until the torttu are cooked through.
8. Allow the torttu to cool, then decorate with crumbled gingerbread and icing.
