A traditional Finnish pastry named after the poet Johan Ludvig Runeberg. This delicious tart is easy to make and perfect for serving at coffee gatherings.
Preparation Time: 1 hour
Serving Size: 6 tarts

Ingredients:

- 100 g butter
- 1 dl sugar
- 1 dl almond flour
- 1 dl all-purpose flour
- 1 dl breadcrumbs
- 2 eggs
- 1 tsp baking powder
- 1 tsp vanilla sugar
- 0.5 dl raspberry jam
- 1 dl sugar for icing
- 2 tbsp water

Instructions:

1. Preheat the oven to 175°C (350°F).
2. In a bowl, beat the softened butter and sugar until creamy.
3. Add the eggs one at a time to the mixture, mixing well after each addition.
4. In a separate bowl, combine the dry ingredients (almond flour, all-purpose flour, breadcrumbs, baking powder, vanilla sugar).
5. Gradually add the dry mixture to the butter mixture and stir until well combined.
6. Pour the batter into silicone molds and bake in the oven for about 20-25 minutes.
7. Allow the tarts to cool for a few minutes before removing them from the molds.
8. Trim the bottoms of the tarts to make them level so they stand upright.
9. Lightly dip the tarts in punch syrup or moisten with raspberry jam.
10. For the icing, mix the sugar and water together and decorate the tarts with rings.
11. Serve the tarts with coffee and enjoy!
