A delicious and filling omelette roll perfect for festive occasions. The fillings can easily be varied to suit your taste. Preparation Time: 1 hour
Serving Size: 15 servings
Ingredients
Base: - 100 g butter
- 1½ dl all-purpose flour
- 5 dl milk
- ½ tsp baking powder
- A pinch of salt
- 3 eggs
Filling:
- 200 g plain cream cheese
- ½ tbsp horseradish paste (or to taste)
- 1 dl chopped dill
- 150 g cold-smoked salmon slices
- ½ red or green bell pepper
- (A pinch of black pepper)
Instructions
1. Melt the butter in a saucepan and whisk in the flour until combined. Gradually add the milk, cooking the mixture for a few minutes. Let it cool. 2. Stir in the baking powder and salt, then add the eggs one at a time, whisking well after each addition.
3. Pour the batter onto a baking paper-lined tray and bake at 225°C (437°F) for 15-20 minutes.
4. Turn out the cooked base onto a sheet of baking paper and let it cool.
5. Mix the cream cheese and horseradish paste together. Spread this mixture over the cooled base and sprinkle with dill.
6. Finely chop the cold-smoked salmon and dice the bell pepper. Scatter them over the cream cheese layer.
7. Roll the base tightly and refrigerate for a few hours, or preferably overnight.
8. Slice the salmon roll and garnish with dill and lemon slices if desired.
