A delicious chicken and pineapple stir-fry that's perfect for a quick dinner or filling meal. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 400 g chicken strips - 200 g pineapple chunks (fresh or canned)
- 1 red bell pepper
- 1 green bell pepper
- 1 onion
- 2 garlic cloves
- 2 tbsp soy sauce
- 1 tbsp oil (e.g., canola or olive oil)
- Salt and pepper to taste
- Fresh basil or parsley for garnish (optional)
Instructions:
1. Peel and chop the onion and garlic cloves. 2. Rinse and slice the bell peppers.
3. Heat the oil in a large skillet or wok over medium heat.
4. Add the chicken strips to the pan and cook until golden brown.
5. Add the onions, garlic, and bell peppers. Stir-fry for about 5-7 minutes until the vegetables are tender.
6. Add the pineapple chunks and soy sauce. Mix well and heat for a few more minutes.
7. Season with salt and pepper to taste.
8. Serve immediately, garnished with fresh basil or parsley if desired.
