Indonesian Salad with Beer Peanut Sauce

Serving Size: 4 servings
Ingredients:
- 1 mango (fresh or frozen)
- 1 cucumber
- 4 tomatoes
- 2 avocados
- 1 bunch of cilantro
Salad Dressing:
- 1/2 cup sesame oil
- 1 cup raspberry sour ale
- 1 teaspoon honey
- Salt to taste
Beer Peanut Sauce:
- 1 cup peanut butter
- 1/2 cup sweet chili sauce
- 2 tablespoons lime juice
- A pinch of chili flakes
- 1 cup lager beer
- 1 teaspoon palm or cane sugar
- Salt to taste
Instructions:
1. Dice the mango, cucumber, and tomatoes into bite-sized pieces and place them in a bowl.
2. In a separate bowl, mix the salad dressing ingredients and pour it over the chopped vegetables.
3. For the peanut sauce, blend the peanut butter, sweet chili sauce, lime juice, and chili flakes until smooth using an immersion blender.
4. Add the beer and salt to the peanut mixture, stir, and taste. Let the sauce chill in the refrigerator.
5. Slice the avocados and add them to the salad just before serving.
6. Tear the cilantro leaves and mix them into the salad.
7. Serve the salad drizzled with the peanut sauce. Pair with a light lager, sour ale, or golden ale.
