Ingredients:

- 400 g fish (e.g., salmon or cod)
- 1 can coconut milk
- 1 l fish stock
- 2 medium potatoes, diced
- 2 carrots, sliced
- 1 onion, chopped
- 2 garlic cloves, crushed
- Juice of 1 lime
- Salt and pepper to taste
- Fresh cilantro for garnish

Instructions:

1. Heat a splash of oil in a pot and add the chopped onion and crushed garlic. Sauté for about 2-3 minutes until the onion is soft.
2. Add the diced potatoes and sliced carrots to the pot, stirring well.
3. Pour in the fish stock and cook for about 10 minutes, until the vegetables are nearly tender.
4. Stir in the coconut milk and chopped fish. Cook for another 5-7 minutes until the fish is cooked through.
5. Season the soup with lime juice, salt, and pepper.
6. Serve the hot soup garnished with fresh cilantro.
