Ingredients:
- 400 g pasta (e.g., spaghetti or fettuccine)
- 150 g bacon or pancetta
- 3 egg yolks
- 1 whole egg
- 100 g grated Parmesan cheese
- 2 cloves garlic
- Salt
- Black pepper
- Fresh parsley (for garnish)
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente. Reserve some pasta cooking water.
2. Chop the bacon or pancetta into small cubes. Heat a skillet over medium heat and cook the bacon until crispy.
3. Add minced garlic to the bacon and sauté for about one minute.
4. In a bowl, whisk together the egg yolks, whole egg, and grated Parmesan cheese. Add a pinch of salt and plenty of black pepper.
5. Once the pasta is cooked, drain it and add the hot pasta to the skillet with the bacon mixture. Toss well.
6. Remove the skillet from the heat and add the egg mixture to the pasta, stirring quickly to prevent the eggs from scrambling. If needed, add a bit of reserved pasta water to create a creamy sauce.
7. Serve immediately, garnished with fresh parsley and additional Parmesan cheese if desired.
