Delicious Russian cottage cheese pancakes, known as syrniki, make for a perfect breakfast or snack. They are served with sour cream and sweet jam.

Ingredients:

- 250 g cottage cheese
- 1 egg
- 2 tbsp sugar
- 1 tsp vanilla sugar
- 1/2 tsp salt
- 100 g all-purpose flour
- 1/2 tsp baking powder
- Butter for frying

Instructions:

1. In a bowl, mix the cottage cheese, egg, sugar, vanilla sugar, and salt until well combined.
2. Add the flour and baking powder, and mix until a smooth dough forms.
3. Shape the dough into small pancakes.
