A colorful and healthy vegetable stir-fry that is quick to prepare and packed with flavor.

Ingredients:

- 2 tablespoons olive oil
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 1 carrot, julienned
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
- Cooked rice or noodles for serving

Instructions:

1. Heat olive oil in a large skillet or wok over medium-high heat.
2. Add the garlic and sauté for about 30 seconds until fragrant.
3. Add the sliced bell pepper, broccoli, snap peas, and carrot. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
4. Pour in the soy sauce and sesame oil, stirring to coat the vegetables evenly. Season with salt and pepper to taste.
5. Remove from heat and serve over cooked rice or noodles.
