Ingredients:
- 2 tablespoons vegetable oil
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 1 carrot, thinly sliced
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon cornstarch mixed with 2 tablespoons water (optional for thickening)
- Cooked rice or noodles for serving
Instructions:
1. Heat vegetable oil in a large skillet or wok over medium-high heat.
2. Add garlic and ginger, and sauté for about 30 seconds until fragrant.
3. Add the sliced bell pepper, broccoli, snap peas, and carrot. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
4. Pour in the soy sauce and sesame oil, stirring to coat the vegetables evenly.
5. If desired, add the cornstarch mixture to thicken the sauce, cooking for an additional minute.
6. Serve hot over cooked rice or noodles.
