Veggie Stir-Fry

A colorful and nutritious stir-fry packed with fresh vegetables. Preparation Time: 20 minutes
Serving Size: 4 servings
Ingredients:
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 carrots, julienned
- 1 cup snap peas
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 2 garlic cloves, minced
- 1 teaspoon ginger, grated
- Cooked rice or noodles (for serving)
Instructions:
1. Heat vegetable oil in a large pan or wok over medium-high heat.
2. Add minced garlic and grated ginger, sauté for 1 minute until fragrant.
3. Add broccoli, bell peppers, and carrots, stir-fry for 3-4 minutes until they start to soften.
4. Toss in snap peas and soy sauce, stir-fry for an additional 2-3 minutes.
5. Remove from heat and serve over cooked rice or noodles.
