Ingredients:
- 2 tablespoons vegetable oil - 1 bell pepper, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 1 carrot, sliced
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon cornstarch (optional, for thickening)
- Cooked rice or noodles, for serving
Instructions:
1. Heat the vegetable oil in a large skillet or wok over medium-high heat. 2. Add the bell pepper, broccoli, snap peas, and carrot. Stir-fry for about 5-7 minutes until the vegetables are tender-crisp.
3. Add the minced garlic and grated ginger, and stir-fry for an additional 1-2 minutes until fragrant.
4. In a small bowl, mix the soy sauce, sesame oil, and cornstarch (if using). Pour this mixture over the vegetables and stir to combine.
5. Cook for another 2-3 minutes until the sauce thickens slightly and coats the vegetables.
6. Serve hot over cooked rice or noodles.
