Veggie Stir-Fry

A quick and colorful stir-fry packed with fresh vegetables and flavor. Preparation Time: 20 minutes
Serving Size: 4
Ingredients:
- 2 tablespoons vegetable oil
- 1 bell pepper, sliced
- 1 medium zucchini, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
- Cooked rice or noodles for serving
Instructions:
1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
2. Add the minced garlic and sauté for about 30 seconds until fragrant.
3. Add the bell pepper, zucchini, broccoli, and snap peas to the skillet. Stir-fry for 5-7 minutes until the vegetables are tender but still crisp.
4. Pour in the soy sauce and sesame oil, and season with salt and pepper. Stir well to combine and cook for an additional 2 minutes.
5. Serve the stir-fry over cooked rice or noodles. Enjoy!
