A delicious autumn mushroom pie that combines forest mushrooms, onions, and a creamy cheese filling. This recipe is a perfect way to make the most of a bountiful chanterelle harvest!

Ingredients:

- 300 g chanterelles (or other forest mushrooms)
- 1 onion
- 2 tbsp butter
- 200 g cream
- 150 g grated cheese (e.g., cheddar or mozzarella)
- 2 eggs
- 1 tsp salt
- 1/2 tsp black pepper
- 1 ready-made pie crust (e.g., puff pastry)

Instructions:

1. Sauté the chopped onion in butter in a skillet until soft.
2. Add the chanterelles to the skillet and cook for about 5-7 minutes until the mushrooms are tender and the moisture has evaporated.
3. In a bowl, mix together the cream, grated cheese, eggs, salt, and black pepper.
4. Stir the sautéed mushrooms and onions into the cheese mixture and combine well.
5. Pour the filling over the prepared pie crust.
6. Bake at 180°C (350°F) for about 30-35 minutes, or until the top is beautifully golden brown.
7. Let it cool slightly before serving.
