Ingredients:
- 200 g soft dates - 2 ripe bananas
- 200 g oat yogurt
- 200 g all-purpose flour
- 100 g sugar (e.g., coconut sugar)
- 1 tsp baking soda
- 1 tsp baking powder
- 2 tsp gingerbread spice mix
- 100 ml vegetable oil
- 100 ml water
- 100 g Biscoff cookies (crumbled)
Frosting:
- 200 g Biscoff spread Instructions:
1. Preheat the oven to 175°C (350°F). Grease and flour a cake pan. 2. In a bowl, blend the soft dates, bananas, and oat yogurt until smooth.
3. Add sugar, oil, and water to the mixture and mix well.
4. Incorporate the dry ingredients: flour, baking soda, baking powder, and gingerbread spice mix. Stir until the batter is smooth.
5. Gently fold in the crumbled Biscoff cookies.
6. Pour the batter into the prepared pan and bake in the oven for about 40-50 minutes, or until the cake is done (test with a toothpick).
7. Allow the cake to cool in the pan for about 10 minutes before inverting it onto a wire rack.
8. Frost the cooled cake with Biscoff spread.
