A delicious vegan date cake flavored with gingerbread spices and topped with sweet Biscoff spread. This moist cake, thanks to bananas and oat yogurt, brings the festive spirit into your kitchen.Preparation Time: 1 hour

Ingredients:
- 200 g dried dates
- 2 ripe bananas
- 150 g oat yogurt
- 200 g all-purpose flour
- 100 g sugar
- 1 dl vegetable oil
- 2 tsp gingerbread spice
- 1 tsp baking powder
- 1 tsp baking soda
- 1 dl chopped nuts (e.g., walnuts or almonds)
- 100 g Biscoff spread (for frosting)
Instructions:
1. Preheat the oven to 180°C (350°F). Grease and flour a cake pan.
2. Blend the dates, bananas, and oat yogurt in a blender until smooth.
3. In a separate bowl, mix the flour, sugar, gingerbread spice, baking powder, and baking soda.
4. Add the dry ingredients to the date mixture and mix well. Finally, fold in the chopped nuts.
5. Pour the batter into the greased cake pan and bake for about 30-35 minutes, or until the cake is done (test with a toothpick).
6. Allow the cake to cool before frosting. Spread the Biscoff spread on top of the cake before serving.
